This refreshing, herb-infused lemonade is naturally sweetened with a honey and thyme syrup, and is great as an immune system boost or even as a cocktail mix.

When I started a clean diet, one thing I came across was the potential health benefits of drinking lemon water. It is rich in vitamin C and flavonoids, which are suggested to help boost the immune system and fight inflammation. Lemon water also has low sugar and calorie content in comparison to orange juice.

In this lemonade recipe, I also add honey as a natural sweetener and for its own health benefits. Moreover, the earthy and peppery hints of thyme from this recipe’s simple syrup create a depth of flavor that makes this more than just your standard lemonade.

While completely optional, you could also use this honey and thyme lemonade as a mix for a cocktail. It pairs well with some Balvenie whiskey. Or if you want a lighter and more floral drink, I recommend using St. Germain Elderflower Liqueur.

Ingredients

  • 4 tbsp lemon juice (fresh squeezed, about 1 large lemon)
  • 7 tbsp water
  • 3 ice cubes

Simple Syrup

  • 6 sprigs fresh thyme
  • 3 tbsp honey
  • 3 tbsp water

Optional

  • fresh thyme (optional garnish)
  • 1 tbsp elderflower liqueur (optional)

Instructions

Simple syrup

  • Stir together the water, sugar, and thyme in a small sauce pan and bring it to a simmer.
  • Turn off the heat and let it rest covered for 30 minutes, strain into a cup.

Assembly

  • Stir in the lemon juice, water, and (optional) elderflower liqueur, and add some ice.
  • Garnish with a fresh sprig of thyme (optional), and serve immediately.
